water - just under 2 cups per mixture

sugar - 3 teaspoons per mixture

Fortune Cookies
3 tablespoons brown sugar

1/4 cup granulated sugar

2 large egg whites

2 tablespoons canola oil

1/4 tsp vanilla extract

1 drop yellow food dye

1/3 cup plus 1 tablespoon flour

Press out lumps from brown sugar, add granulated sugar, egg whites, oil, vanilla and almond extracts, food coloring, and whisk until blended. Let batter stand 20 minutes to rest.

Preheat oven to 350 degrees. Lightly spray cooking spray onto a cooking sheet. Spoon one tablespoon batter onto the sheet and then spread out with the back of a spoon. A cold spoon helps - (sit in ice water but wipe off excess). Have a muffin pan handy for later.

Bake for 5 minutes, three at a time. Coat a spatula with cooking spray and loosen cookies off sheet. Put fortune on hot cookie and fold in half and bend along strait side and stick in the muffine pans until hardens (about 30 minutes).
